It is Linux Mint 21.2
The video encodes fine in the windows version of handbrake (same settings)
I tried to encode a different video with 2 pass settings on the Linux version of Handbrake and it fails also
Not sure whats going on.. I can access the drives ok, can write files in the folder etc

Try the flatpak version.

it was the flatpak version.
I replaced Mint with Ubuntu and it now works how it should.
