What settings do I need to use to convert HDR to SDR ??

Pick the colorspace you want on the colorspace filter.

Im confused to which colorspace to choose, which do you recommend ?

Rec709 is SDR. Re2020 is HDR. I don’t know what the menus look like (not at my computer). But use that I got to select the right choice.

SDR only has 100 nits of dynamic range. It's up to you to make your TV/monitor/phone screen brighter to increase the over all brightness.
Going to SDR is going to compress that 1000nit+ HDR over the range of 100nits. The WOW factor will go away, especially in the whites as they will dim way down. If you want to do some color/brightness adjustments, you'll have to do it in a video editing app.

You are going to lose some bit of color fidelity when converting to SDR, and depending on how handbrake is mapping the HDR to SDR, some details in the shadows and highlights may lose some detail. There is no perfect way to do this and most apps and devices just use a generic conversion profile.
Any custom adjustments outside that will have to be done in a video editing program.

HandBrake's HDR to SDR conversion is not particularly "state of the art" either, but better workflows can be significantly more complex to set up (to the point where I won't bother with the latter, personally). Pick your poison.

Davinci Resolve is a very good free video editing app. But be forewarned, it's not for someone looking for a basic video editing, It is deigned for pros, but has very advanced color adjustments. Im sure there are other free ones out there that may be simpler, but i dont dabble in any thing else. If on mac, try iMovie.

You're right, apples own generic profile does a better job retaining detail in the highlights, just a bit. The handbrake one is ever so slightly washed out. But both look very similar. Just an FYI.
