Would like to select specific content on dvd rip it and import into Final Cut Pro.
Does HandBrake offer selecting portions of a dvd before ripping?
What would be a good workflow?

Rip with makemkv first, then encode with handbrake.

Rip the video titles you want to individual videos with MakeMKV.
Encode the chapters or timestamps you want from those titles with the Production Standard preset in HandBrake.
Import into FCP for further editing.
