a general question

Trying to rip UK Doctor Who Collection blu-rays to HD for streaming to apple tv. All BDs legitimately purchased and for own use.
I ripped the discs using mkv, but any advice on optimal settings? My last encodes failed. Originals were PAL standard def broadcasts so just trying to optimise quality here.

Another issue is the original broadcasts are 625 or 525 line and studio stuff is video so interlaced. I preserve this by using BOB settings.

Any tips on optimal encode settings and retaining interlacing welcome
