what format do you rip to if you want to take footage into final cut pro?

DV format is still the easiest one for Final Cut, but you can't get that with HandBrake. You could use Mpeg StreamClip, Toast, VisualHub, FFMpegX, Cinematize, DVDxDV... (always decrypt the DVD with MacTheRipper first)
