HandBrake’s command line interface outputs to the standard streams stdout and stderr, with encode progress information routed to the former and log messages routed to the latter.
To capture HandBrake’s log messages to a file, simply redirect stderr:

What issues were you having with —json?
I generally have permission issues even in Windows 10. For example I can only save the output file in the same folder structure as the original one, the flag "--json" would return no log file.
Managed to get around things by using good old Excel to generate commands for my >1500 folders. Shift+RightClick "Copy as path" then dump in Excel and rest is easy.

I don’t use it myself but according to the CLI —json will change the FORMAT of the log file not actually generate a log file.

Understood, which is why I was so happy that I was pointed to the log creation page which explained how to do it. In my opinion (whole point of the post) somebody should note on that page how to get the logs as it isn't clear.
