Anyway to figure out which version x265 Handbrake is using?

I'm pretty sure the latest stable is using 2.3, but is there anywhere to confirm that? I'm mostly asking in regards to the nightlies to see if they're using a newer version.

If you navigate to your Handbrake installation folder, you should be able to right-click on the .dll file in question, click Properties, then the Details tab. The version number will be listed there.

Here is the link provided via these forums: viewtopic.php?f=11&t=34165

Though, here is a link I discovered recently which claims to have more recent builds. I've had some luck with the latest stable AVX2 x265 dll (version "2.5+4-b4a5bcf").

The version is printed to the activity log when encoding using x265.

I believe 1.0.x is on x265 2.3, nightly is 2.4 but will be 2.5 soon (had to workaround a bug first).
