Question about default preset

Hi,

There is a video in a DVD whose source format looks like this:

720x480, PAR:8/9, Width: 720, Height: 478

Question: Does it make sense to use the default preset: Fast 1080p30 which leads to the output format: 622x478, PAR 70x81? Or is it better to use "Very Fast 720p30" for it is quicker? Is there any quality difference?
