Aspect Ratio 'greyed' out

Description of problem or question:
Been given a DVD created from an old 8mm home movie with a request to convert this for use on the Web. Handbrake says the DVD is encrypted but AFAIK it isn't and I can't see any reason it would be since it was a home movie. DVD originates from a (probably old) Windows machine. It is intended the mp4 version will be put on a small Church website

Ignoring encryption the DVD scans with HB, but indicates stored size as 16:9 but original 8mm would be 3:2 Normally I could adjust the display setting or the PAR to sort this but they are greyed out and refuse to allow a change despite telling HB to ignore aspect ratio.

Are there any ways I can sort this? It may be something to do with the (supposed) encryption which I am unable to remove.

Link to log is below.

HandBrake version (e.g., 1.0.0):
Version 1.3.1 (2020010400)

Operating system and version (e.g., Ubuntu 16.04 LTS, macOS 10.13 High Sierra, Windows 10 Creators Update):

MacOS 10.14.6

Does this link work? https://pastebin.com/ZsU7gA7G

I think the encryption thing is probably a permissions problem since Handbrake will scan the TS folder and then produce a rip when asked. The problem seems to be that I can't tell it to display in 3:2 or 12/14:9 form to reduce the 'stretch'. Copying the VideoTS folder from DVD to the Hard drive doesn't make any difference apart from speeding things up.

The "encryption alert" is just an alert to remind the user that HandBrake can't decrypt the DVDs, it doesn't mean that the disk you are trying to read is encrypted.

Change the "anamorphic" setting to custom to set a custom par.
