How do I encode using OPUS or Vorbis?

Description of problem or question:

I'm new to handbrake, but not new to transcoders in general. For some reason, I can't seem to figure out how to actually get handbrake to re-encode the original audio track into any of the third party codecs listed in the "Selection behaviour" panel. I have a feeling I'm just going about it the wrong way.

As a first time user, this is the first oddity:

FLAC, OPUS and Vorbis are not presented in the drop down by default.

After discovering that full list of codecs could be accessed via the "Selection behaviour" panel, I thought I figured it out:

I select OPUS, set the bitrate, click OK. I'm back on the main Audio tab, and click reload.

The bitrate changes accordingly (from the default of 160 to 80), but the codec remains unchanged and is stuck with AAC.

What am I doing wrong?

I tried googling for a basic tutorial on this, but nothing relevant turns up. I've read the official documentation (https://handbrake.fr/docs/en/latest/adv ... aults.html) and I can't find anything describing how to encode tracks using the codecs I listed above.


HandBrake version (e.g., 1.0.0):

1.1.2


Operating system and version (e.g., Ubuntu 16.04 LTS, macOS 10.13 High Sierra, Windows 10 Creators Update):

macOS High Sierra 10.13.6


HandBrake Activity Log ***required*** (see How-to get an activity log)

No activity log yet, as I'm just trying to ascertain if I'm even using handbrake correctly at this stage.

Select the MKV container, you can't put those in mp4 (actually you can, but it's better if you don't right now=.
