Whats the best settings for converting..

an MKV which is around 18gig that also has DTS audio, the reason I mentioned the DTS is that I would like to play these MKV from my dreambox keeping as much of the original format as possible. The dreambox 800se does not play DTS audio so I need to use handbrake to convert the MKV file which took around 25min on a macbook pro so now DTS audio would be converted to AC3 FFMPEG 5.1. These files will now play on my dreambox but I notice the sound is low but nevertheless if I turn the volume up and it's ok.

Is there a known best setting for MKV files to convert the dts & and how long should a good conversion take ? 25min did seem a tad quick.

Just to clarify, the Dreambox does or does not play DTS audio?

No the dreambox does not play DTS audio so I need to convert the audio to another format AC3 FFMPEG 5.1 using Handbrake. I just don't know if this would be the general consensus when trying to preserve as much of the original MKV file as possible. I just started using Handbrake yesterday.

Depends if your device can decode multichannel AAC and send all discrete channels as PCM over HDMI (not many can do that, they often go with the basic license that only allows Stereo output even if the AAC audio is 5.1). If it can, you may be able to preserve a bit more quality.

Alternatively, if your device can decode multichannel FLAC properly and you don't mind large file sizes, you could use that.

But if you want something that's widely compatible and can work over an optical cable, AC3 5.1 is the best you can get.
