Apple TV Preset and Video Resolution

When using the Apple TV preset it shows the input resolution of 720x480 and the output resolution as 720x496. However, after encoding and importing the video into iTunes, iTunes reports the a video resolution of 662x496. Why is this?

The Apple TV preset uses loose anamorphic encoding, which for NTSC 4:3 material translates to a display resolution that is smaller than the storage resolution.

If you read the Wiki on anamorphic you'll see that your video really is the smaller resolution. Anamorphic just stretches it out when it's played on a widescreen TV. It makes storing full height (i.e. 480 pixels) video possible on DVD technology.
