Best settings for ripping UFC DVDs

I have been able to rip all my DVDs to use on my Plex Server with HandBrake and they came out great, however I have tried multiple settings for ripping my Ultimate Fighting Championship DVDs and they come out poorly. Does anyone have any recommendations on the settings I should use.

Recommendations are easier when you know what you're doing that gives the "poor" results, and why they're "poor". That's what logs are for....
