Your settings look a little abnormal and it appears the program is choking on the bitrate being "too low." Have you tried encoding with one of the presets? Many of the devs use the AppleTV preset and are quite happy with the quality.

Also, did you pre-rip the dvd using an external program, such as AnyDVD?
