Simple Settings

In the past I have used the Normal Setting and that has work OK for DVDs. The latest version of Handbrake has more presets and I want to make sure I am picking the optimal one(s).

All of the videos I am encoding are coming from DVDs and are targeted for HD (1080) LCD Flatscreens
I am only interested in English Audio and Sub-titles
My media player (Dune HD) and receiver handle most forms of Surround sound
I am looking for a playback quality near that of the original DVD, a little loss is acceptable

I think there are a couple categories I should consider:

1) Older films and TV shows in Mono or Stereo (no sub titles), what would be the best preset for this?

2) Older films and TV shows in Mono or Stereo (with sub titles), what would be the best preset for this?

3) New films and TV shows in Surround Sound (no sub titles), what would be the best preset for this?

4) New films and TV shows in Surround Sound (with sub titles), what would be the best preset for this?

Does anyone have a recommended set of presets?
