Transcode HD movie and keep 5.1

I typically encode mkv or avchd files that are HD with surround sound and I was wondering what audio settings I should use to maintain he surround sound. When I go to the audio settings I'm slightly overwhelmed with the choices there such as source having 14 unknown options listed as (dts)(5.1), (dts-hd ma)(5.1ch), and then a whole bunch of (AC3)(5.1). Then with audio codec, mixdown, and the other options... What do I select for a good 5.1. I use windows media player as my player, and have an HDMI cable from my video card to my home theater receiver. Thanks for any help.
