remux without transcoding

Is there an option in handbrake to passthru the video instead of always transcoding?

I'm trying to do two things so that my files can be use on my iPad
1) change the container to m2v, and
2) add the AAC soundtrack.

I believe that the video component of my files is compliant for playback on the iPad.
