Like I said, I ran several different encodes with various things checked on and off, I think this is one I did with the 'Foreign Audio Search' option and 'Forced' checked.

Foreign Audio Search did not run. I don't think it's compatible with --start-at and --stop-at. Any reason why you need to use these options?

I was testing it out on a section that I knew had the subtitles to see if it was working first, since it takes around 4 hours to fully encode an episode. I'll try just running it on a full episode as a test, see if it pulls the subtitles then.

Okay, I converted an entire episode with the Foreign Audio Search, seemed to pull the subtitles just fine. So, looks like you're right, just can't use it if you're not converting the entire title.

Just out of curiosity, so I understand the process, if I do a Foreign Audio Search and check off Forced, or if I select the English subtitles and check off Forced, am I basically accomplishing the same thing? Or is there a situation when using the English subtitles wouldn't work that way?

Foreign Audio Search will scan all subtitle tracks matching the first language in the audio list (in your case, English) and try to determine which track, if any, contains forced subtitles. It's accurate for most sources and avoids a lot of trial and error.
