You are getting your titles and chapters mixed up.

vbv-maxrate & vbv-bufsize are what you want.

Thanks for the tip about MakeMKV. It took some doing, but it's installed and rips really fast. Just 25 minutes or so. I know took the biggest file it created (title00.m4v) and selected "high profile" and it's estimating 5hrs39m. I think the normal profile is much faster, right? You should...

Try high profile and if that looks ok stick with it.

In the first scan you are selecting the BDMV folder not the root folder.

You can also increase the number of preview frames in the preferences.

What are you using to decrypt your DVD?

I don't think HB can do this, more to the point why would you want to?

First you should upgrade to the latest release or a nightly build.

Then you should use a dedicated ripper to rip your DVD's to your hard drive first before encoding them with HB.
