Erm I stopped following your post after a bit, but the best option is to re-rip the DVD with a real ripper that isn't free and can deal with the more complicated protection schemes studios use.

For streaming? I'd pick something along the lines of an iPod preset then, which will keep the bitrate low. It depends on how much quality and time buffering your users will allow.
