Are you reading directly from the copy-protected DVD, or through something that is removing the copy protection first? A lot of people add a third-party utility to read from DVDs, then are surprised when the new install does not recognize their forgotten 3-party code.

The people who created the copy allowed the compression utility to encode into it the commands necessary. They did not use handbrake, so the command line is not the same.
If it's important to emulate them, you would want to use the same commands on the same program.

Since it takes 3rd-party software to have handbrake "read" a DVD, it would take 3rd-party software to automatically name files based on what that 3rd-party software did.

The file name is set when the file is loaded , according to the rules you gave handbrake. When you change the rules, reload the file , so the new rules will be used. You can encode a video without compressing it, but generally you do it to make it smaller (compressing). 99.99% the same thing.

As I understand the Roku, it reads the title from the file being played, avoiding reading the TRACK title. So you have to make sure the encode includes the title IN the file, which can be a problem with early versions of handbrake.

License for MakeMKV is sometimes tricky. The basic license for the download expires after 60 days. There is a message on the forum (sticky, actually) that has the current key in it. For BD and UHD, you have to enter the password after 30 days to re-enable it. Some people actually change their system...

Your log does not show what choices handbrake made, just that your source had PCM encoding for the audio. This is where the encode log is helpful, to see how the choice was made.

"Apple 2160p60 4K HEVC Surround" defaults to MP4 file output, which is not compatible with PGS subtitles. The SINGLE track you select MUST be burned in.

Use a player that doesn't announce the name on playback.

I just typed at someone who was questioning whether the MakeMKV license was limited by architecture, or worked on all version for Intel, AMD, or even the ARM versions... MakeMKV is available on Windows, MacOS, and multiple Linux versions.

MakeMKV will include most everything if you ask it too. You can expand a track to see what's in it, and say yes/no to things within it.
AnyDVD can also do this stuff, although I haven't tried it.

You do realize that reading encoded DVDs is not a native function of handbrake, correct? Attempting to do so involves a third-party library.
Reading your log file indicates that the DVD-reading library is having trouble reading the disk. It probably needs cleaned.
