Did you try increasing the sound in iTunes by using get info? Under options there is a volume adjustment and you can go up to +100% volume. You may just need to get a better set of headphones. I live in NYC and most the time have the volume close to max, and I own a set of heavely closed Sennheisers. If your using the ones that came with the iPhone you are at a loss from the start!

Sounds to me like you need to disable auto crop in the picture settings, and set all factors to zero.
If the subtitles are in the orginal picture but under the image, you will loose them with auto crop on.

I downloaded the test clips from the Steve's Digicams' review of this camera. I compared the 24fps HB output with the native 30fps. My other question is, is there a good way of converting from 30fps, to 24fps to keep 720p with out it looking jumpy? Possibly, I always use ClownBD as it makes life so easy with all the new Disney Blu-ray being multiply titles. Sin City has about 24, all have to be joined up!! Answering the questions from your initial post. AAC isn't any better or worse, although if you're interested in quality and don't mind the marginal increase in filesize I'd go with AC3 passthrough.
