Event Viewer is running all the time; you may have to log in as an adminstrator to get to it, but it's in the Control Panel, Administrative Tools section. It logs a lot of stuff, including any time Windows shuts down a broken program. It should explain WHY the program was shut down.

Are you referring to "Closed Captions", which are part of the video stream, or "subtitles"? I know that MakeMKV will extract Closed Captions from DVDs as a text subtitle, but Bluray sources do not use them much. But the log doesn't mention a CC-type subtitle in the source. Which audio tracks you use depends entirely on your playback hardware/software. AC3 seems to be played by more devices, since it's the codec used with DVDs. Some people have "no audio" if they don't include an AC3 track.

The Windows Event Viewer report for the stoppage would be helpful. Your encode log doesn't show WHY the crash occurred, as it was reading through the file to at least chapter 18. With the age of the MakeMKV version used, it is possible that the file has been damaged, or subject to one of the v1.10.1...

Convert from what to what?

From optical disk to files on your hard drive, ripping software is good for that. Programs like MakeMKV will do no change at all to the video as they make MKV files. ffmpeg can copy between different containers with zero or a lot of change.

Define the problem space better.

Basically, your laser isn't able to change focus to read the second layer of the disk. If cleaning the laser doesn't help, you probably should be a new drive. Most player software I've tried can deal with an "ISO" of a DVD, even if it is encrypted.

You would have to have a video card that implements a video encoder chip, such as Intel's QSV, or the equivalent tech from nVidia or AMD. The flatpak distribution can use QSV, but AMD and nVidia are experimental.

"Just" a GPU is not going to be used by handbrake.

On the 4K encode you are restricting the bitrate to 2500, but the 1080p bitrate is unconstrained. What do you get if you do not constrain the 4k video bitrate?

DVD players almost universally expect DVDs, with their required file structure, to be inserted, not just "playable files".

You need DVD authoring software, or you could just purchase a media player that can handle many more formats.

Have to wonder if you're buying Apple hardware for that big a difference in price. 8-core AMD processors (not the Ryzens) are around US$100 or less, and the 4-core versions are about the same. I haven't bought a 4-core in a decade.

If your hardware or drivers do not support it, you won't be able to access those encoders. If you had followed the instructions, you would have sent the log that would tell us about your hardware and drivers...

If the object is strictly "to learn", rather than "accomplish a task", then handbrake isn't the place to start. There is SO much going on "under the hood" that you will lose a lot of time just figuring out how one thing affected the other things that depend on it, which you don't have direct control...
