Videos work fine here, nice job and cool research.

Only further thing I can add is the "Web Optimized" checkbox might help down the road (it moves some information about the video from the end to the front so playback can start sooner). I wouldn't worry about it.

You can use average bit rate, 2-pass encoding and use an online bit rate calculator to estimate the final size. Don't forget to include audio bit rate in your calculations.

If the issue persists, you could also try the nightly build which has improved decoding for some media formats that might be flaky in 1.1.x.

My guess is you're seeing the Foreign Audio Search scanning for forced subtitles. This additional pass adds subtitles for small bits of dialog not in your language (e.g. an alien speaking). QuickTime 7 which is basically gone is. QuickTime X which has been around for some time has always been 64-bit.

This is the real issue with performance, combined with what I assume is a spinning hard disk and not an SSD:

For the x264 encoder, keyint may be set between 1 and 250 (frames). The default is the maximum. I feel like you have a limited grasp of what's going on here. And that's okay! HandBrake has done variable frame rate video just fine for a loooooong time. Okay to input, compress, and output, no worries.

Ah, yes, the PGP signature. Indeed, those serve a somewhat different purpose and syncing names with the code sign cert is of little value.

It's reasonable where creating files for adaptive streaming, which is a specific method of media distribution on the internet. For most personal use cases, it's not something to be concerned with.

HandBrake's E-AC3 encoder does not get support 7.1 channels. You'll have to do your own research on audio quality comparisons.

The 6-8 core point of diminishing returns applies to the x264 encoder. x265 scales out many cores.

Also, while using Intel QSV will typically be fast, you can expect larger file sizes.

Fast 720p30 will also work fine. A few minor differences with that preset. Try that and reduce the quality to maybe RF 23 or 24 if you want a smaller file size.
