Known issue, but there's no easy fix. Better to use plain stereo or true multichannel audio.

Well, 4K has about 4 times as many pixels as 1080p, so encoding is about 4 times slower…

It could be a bug in HandBrake and one of the libraries it uses, but those aren't easy to fix. You're better off working around the issue using MakeMKV or CloneDVD if you have that.

Keep in mind if you go from 12 (default frame threads with 8 logical cores) to 2, your encode will be 5 to 6 times slower… Threads' effect on quality is mostly negligible so long as (thread_count) is <= (Vres / 40), where Vres is the vertical resolution in pixels. x264 at least is frame duration aware, so you should be able to use the same RF regardless of frame rate. Not sure about x265 or other encoders.

It won't be in the list if your input audio track is not 7.1. If you have a source with 7.1 audio loaded in HandBrake, and 7.1 is not listed in the mixdown drop-down for the corresponding audio input track, please provide the Scan Log for said source and a screenshot of the audio panel.

Blu-ray discs are encoded using lossy video compression techniques; MakeMKV is passing it through. HandBrake always re-encodes the video. HandBrake's RF 0 is smaller than the uncompressed studio matter, but larger than a lossy encode of said studio master (such as the Blu-ray). You may be better off...

The Mac user interface doesn't allow in-place saving of presets; you need to set your settings and create a new preset (the button is labeled "Save New Preset…"). 4 GB is indeed a bare minimum nowadays; and not enough if you want to encode 4K with x264 (and possibly x265) lookahead. It won't have any effect on encoding speed per se though (until you run out of available RAM, that is). Not familiar enough with AMD CPUs to offer any guidance in that regard.

Also, the source track is AAC; so after updating to 1.2.0 try using AAC Passthru instead of an encoder.

Yes, there's a known issue with 5.1 channel AAC which will be fixed in the next version.

libavcodec is the name of the encoding library in both Libav and FFmpeg ;)

It's basically the same encoder, the FFmpeg version just has many improvements that the Libav developers haven't had time to review and merge into their libavcodec.
