Encoding speed versus Quicktime

Handbrake is an excellent program at an excellent price.

I'm curious as to how it manages to be so much faster than Quicktime, for example when encoding a movie in H.264 at 720x576 to the same format at 320x240.

iPods apparently do not support CABAC or b-frames. I have read that, for a given output quality, CABAC saves about 15% in bit rate compared with CAVLC. So what about b-frames?
