Your receiver will not decode AAC 5.1 and I don't think you'll find any receivers that will. Unless you want to hack your Apple TV, go with DPL2. even if you hack your ATV, AAC5.1 is currently useless, there is no way to decode AAC5.1 to AC3 on the fly from the ATV and pass it through to the receiv...

Re: Loss of sound and slow encoding (~10 fps)
1. RIP with MTR the main feature of the DVD i recomend you change your first step here to full disk instead of main feature. it seems to give a greater success rate and only takes a few minutes more to rip, there might be something about the way MTR is reauthoring to strip out all other content.
