Especially with the AMD chips, you need fast RAM not a lot of RAM. The optimum for video encoding would be 8GB at 4000Mhz with a 2000 Mhz FCLK. A single encode in HandBrake won't currently use anywhere near 32GB. Probably more like 4~5GB per 4K encode peak. Thus, i'd suggest a faster 32GB kit over a slower 64GB kit.
