Where I tried to encode with ac3 - that caused quicktime to fail noting the movie could not be opened...
Switching to FAAC worked!

I can rip a DVD - I'm ripping a TV show dvd - but when I try to import the video into iTunes, it incorrectly assumes the video is a movie. In fact, there are no metadata tags on the video file.
