Is there any software with a gui interface which would just convert thr audio to ac3 5.1?

Thought of one more thing. If I converted my existing mp4 files which has aac audio to mp4 with ac3 what would the quality of the audio and video be like. Would it be much more inferior than if i had converted it from the original dvd?

Thanks. One final question When I open the iso file it initially shows 1 Audio track AC3 converting to AAc(avcode) but when I choose a preset such as Super High Quality it adds a second one .
