You could try, if AAC works for you. AAC in HandBrake supports 7.1 channels, and AppleTV 4k supports AAC.
The EAC3 7.1 issue needs to be fixed in FFmpeg. https://github.com/HandBrake/HandBrake/issues/1085

If you use x265, the "Slower" preset is the first one, where all the x265 magic is starting to happen. But, it takes a very long time to encode.

Thanks for the info. Encoding time has increased from about 35 hours (without NLMeans) to around 49 hours (with NLMeans). So, tomorrow evening I will know how the complete movie looks like with denoising.

In 1.3.0 the pp7 Deblock filter was replaced with FFmpeg Deblock filter.
