When encoding DVDs, I have noticed the same - DVDshrink will crash when encoding. If the video stream has bad data...it seems logical.
Try using Vobblanker (different input/output folders), it's free and available at https://www.videohelp.com/software/VobBlanker

I have experienced this too, and in most cases, I run the DVD through vobblanker...and it usually does the trick too.

I don't know about Dolby, but when speaking DTS...the DTS HD track doesn't actually contain the entire audio, but only the difference from normal DTS to the HD part. I'm GUESSING that they have done the same at Dolby's end, in order to save media stream bandwidth, so just choose "auto passthrou...

I use Plex as well, and it has had a lot of issues recently with subtitles, in particular with sidecar .SRT files. By random choice, I have noticed that when using Advanced Substation (.ass) files, Plex doesn't have any issues when playing back. The only little thing is that I have to use text-size ...

I use the latest nightly build, and "auto-pass-through" usually does the trick when finding a Dolby TrueHD blu-ray...(If I select it manually, Handbrake skips the encode entirely).

I use Plex as well, with +1000 backups of DVDs and blu-rays. Do notice that Plex WILL re-encode (transcode if possible) both video/audio on-the-fly is the needed bandwidth and/or CPU power isn't there...even on LAN. This feature is part of Plex's success...it works, even when it shouldn't. And when ...

The problem with liquid qooling is, that while the CPU and/or GPU is cooled quite OK, the surrounding devices aren't. I don't know your motherboard, but I'm guessing that just next to your CPU...you'll find cooling for your CPU's power supply. When encoding video, you have a 100% CPU load over a lon...

I use Handbrake to convert DVDs and blu-rays into MP4, not MKV. The only time MKV is used, is when the blu-ray is encoded with many small files - Handbrake doesn't support seamless joining of those parts...
