I do not see what your output file type is supposed to be. What you describe is what you see when the output is MP4 (or m4v); PGS subtitles must be burned in for those.
If you are actually outputting an MKV file, you get "don't burn in" to work, but MP4 is going to burn in PGS, period.

Handbrake does not have a function to extract JUST the subtitle tracks from a video, so you would need a different tool.
Also, the default subtitle tracks on DVDs are pictures of the text, not SRT-style subtitles; do you already have a graphics-to-text conversion program?

You need to install third-party software to directly read DVDs in handbrake. Handbrake last included that in the 0,9 series, 12+ years ago.libdvdread: Device D:\VIDEO_TS inaccessible, CSS authentication not available.

You are just NOW seeing high CPU usage with handbrake? What were you running previously that slowed it down? Or did you change your priorities, moving handbrake from background (typical) to foreground (atypical) settings?

Did you LOAD the saved preset, after saving it? If not, it will revert back to the previously loaded preset.

Your log says you are using a larger setting in the NAME of the preset, but the preset itself is 1920x1080 for maximum size. It then resizes the video to fit that window, leaving you with 1440x1080.
Your preset needs to have the maximum dimensions removed to prevent the rescaling.

Probably because the current versions aren't intended to run on 32-bit systems. It has been a number of years since they compiled to 32-bit code. With no information to work with, it is very hard to guess at what you need to do. If the subtitles are already hard-coded, there would not be a reason to "encode them in". Do you want the file "bigger", "smaller", or "same size"? How was it encoded originally...

Handbrake reports that the DVD decoder stopped sending data to it, citing a read error. It finished with what it had.
Finding out why your DVD drive could not read the disk will be helpful, but this isn't an actual handbrake issue.
