The flathub variant may work but we don't plan to formally support Ubuntu 21 until 1.4 comes out in the hopefully not so distant future.

It's fixed for the next release. IN the mean time, all you can do is use a development snapshot build / compile from source

Also note, the Flathub build was probably refreshed by the GTK update recently. Ergo the 2021 date.

If you have a laptop or system with both onboard Intel graphics AND Intel Discrete Graphics, then encoding tasks are split between the GPU's automatically by HandBrake if multi-instance encoding is turned on. Why would you want to? Running at 100% is not a problem.

HandBrake already runs at a lower system priority to keep the system responsive should you wish to do other tasks at the same time.

If you don't have 2 pass enabled on the video tab, then you are always doing 1-pass video and maybe 1 pass scanning for subtitles. Given HandBrake wasn't updated, either GTK updates introduced a bug, or introduced an incompatibility. It's not uncommon. It's never been formally supported and has been known to cause various different problems with folks trying it. If you want to try, knock yourself out but it's not something we are going to support you with or fix the various issues that you'll likely nor or eventually run into.

Use MakeMKV, then HandBrake. Don't try to make their libraries work with HandBrake.

You can link but not post screenshots on this forum. (Embedded content is blocked for security reasons)

The link to the screenshot shows the GPU Encoder being used. The CPU activity is decode, filters, a/v sync, engine, audio encoding etc. All the stuff that doesn't run on the ASIC basically.

The resolution is beyond the maximum allowed of 4096x4096
You'd need to use teh H.265/HEVC encoder for this particular resolution unless you downscale it.

A fully loaded CPU will saturate, sometimes within second, if not a low number of minutes on marginal cooling so the pauses are indifferent.
