You're fine leaving tune on none or selecting a tune. The other tunes can affect other factors including compatibility. HandBrake uses level 4.0 for 1080p30 because it's most compatible and avoids extreme bit rate spikes. Some devices work with 4.1 just fine, some do not. Depends on what your playba...

Grain is for preserving grain, similar to how the x264 and x265 grain tunes work. Film or high motion are best for your situation.

There is little correlation between the bit rate a camera needs and the bit rate needed for a quality archive in post. Your (professional!) camera is a low power, portable device with a real time hardware encoder that only makes use of basic encoder features and throws bits at the problem to achieve...

Sounds like some of your devices have issues with 2160p at high bit rates, probably due to a small decoded picture buffer. Lowering the quality, frame rate, or both are the only options, short of diving into vbv-related settings and doing a ton of testing. Looks like your sources are < 30 fps to beg...

Setting cropping to custom, and then all values to 0 (zero), disables autocrop. Then you can save a new preset for future use as Ritsuka suggests.

The reason I did not suggest passing through the original audio is the source being LPCM, which HandBrake cannot pass through. It is falling back to the AC3 encoder which is not ideal in this case. 256 kbps is what Apple uses for music without video. Some iDevices only support 160 kbps when the audio is part of a video file. If your playback software/device supports it, go all the way to 320 kbps AAC. Alternatively, if you can use the MKV container, you can use FLAC which is lossless.

NLMeans tune Grain does not denoise luma at all.

Try Film or High Motion on Ultralight/Light strength and see if that works.
