From your failed log, the fallback encoder is av_aac. There is no fallback encoder on the sucessful log. I'd guess that your TV doesn't understand AAC audio. If you opened the output files in MediaInfo, you'd be able to see which encoder was used on the audio. Did the preset change between 1.6.1 and...

Fair point. I'm not so adept at reading Handbrake's logs these days, I noticed both logs mention Intel Media SDK hardware and QSV decoders.

Things seem to start going wrong for the OP at 01:05:25. A problem decoding the source?

I wonder if remuxing it with MKVmerge/MKV Toolnix?

Handbrake is an encoder/transcoder, it's not a disc ripper. A long time ago Handbrake did a fair job of ripping discs, but it was never intended to do that. I suggest using MakeMKV to copy the episodes from the Blu-Rays. You'll end up with a 1:1 copy of the video and can pick which audio and subtitl...

Handbrake does not decrypt DVDs. You'd need to rip the titles you want to transcode first. MakeMKV is a good choice for doing that. Open the file that MakeMKV generates with Handbrake.

While X264 and X265 might not make use more than 8/12-ish cores, more cores are certainly useful for NLMeans denoising.

I nearly always take MKVs produced from MakeMKV as my source for Handbrake, so I might be way off here, but is your source encrypted/copy protected?

Lots of log entries about Encrypted DVD support not available and CSS authentication not available.
