You should be able to change your .avi's to .mp4's for your PS3.

As a rule I always assume 2000Kbps unless the DVD is such low quality that I can get away with lower. Or is certain low complexity animation (Like South Park Movie which I was able to get by with 1000Kbps and still have a perfect picture.) I wouldn't go lower than 1500 for most stuff though. Well, it's official. Neither HandBrake, MacTheRipper or DVD2OneX will read a DVD correctly. But DVD Player and VLC play it fine. It's just ripping software has problems. MTR rips bad rips.
