QuickTime is fine for me? Maybe the gpu playback isn't affected by the same issues? Or I have low standards.
Anyone have some suggestions for legal HD source material, and/or settings to test it with? Realise iTunes won't sync it, but I'm sure it'll play from doc sharing apps.

I doubt that anything on the iPhone makes the volume rules different for self-rips. What's more likely is that it's now more noticeable that HB rips are quieter than your other content. HandBrake has a known issue which results in slight movie truncation sometimes. A little searching could have thrown that up - as well as this thread on how to rip 2-disc movies.

There's no point upscaling. Anamorphic doesn't do that - as I'm sure you realise - the width really is 720px, it just displays wider to match the increased vertical resolution.
