Fast 720p preset would be a good starting point for the zoom recordings. Switch the audio to passthrough instead of reencoding it. Adjust video encoding speed or quality/size from there. For the timelapse, I'd start with the Fast 1080p preset if it's 1080p, or a 4K preset if it's 4K, again with pass...

HEVC decode is a different question than 4K support. HEVC decode was added prior to 2015, as DXVA2 accelerated HEVC decode was added in 2015.

For cinematic content (~2.35:1), HB is cropping of the black bars that they matte the 16:9 frame (required for Blu-ray) with.

You can add a whole folder to the queue; it works okay.

There are commits specifically addressing issues with 4K (preview sizes, etc) as far back as 2015 as the material became more common, but it was supported long before that.

No, HB only does rectangular video. You'll need a video editor for arbitrary rotations.

Greyscale option on the video tab

Maybe nlmeans denoise if it's grainy and you don't want it to be

Drop the AC3 passthrough track if you don't need it for compatibility

Sometimes it's an intentional look, sometimes it was just the limitations of the film recording (or later transfer).

If you like the original look, use the film encoder tune.

If you don't like it, use the nlmeans filter.

In MakeMKV you can also select streams, so it may not have all the audio/subtitle streams depending on your MakeMKV settings.
