HB will not and can not mix the audio tracks, so that isn't happening.

Sometimes it's an intentional look, sometimes it was just the limitations of the film recording (or later transfer).

If you like the original look, use the film encoder tune.

If you don't like it, use the nlmeans filter.

In MakeMKV you can also select streams, so it may not have all the audio/subtitle streams depending on your MakeMKV settings.

I'm surprised you're happy with the result given the metrics in the log... but to each their own. You could try quality based encoding with RF 38 if you want to do that.

HB hasn't supported commercial DVDs for more than a decade, and poorly authored personal DVDs rarely work well.

Rip disks with something intended for that purpose, like MakeMKV.

Pastebin the 10k log if you don't mind. I'd like to see the QPs to give you a recommendation for quality based encoding to get away from a fixed bitrate target.

Where did you get this garbage from? Some blog post? It's capping your bitrate at 2100 kbps.

Need the encoding logs to see what you're actually doing.

Does the 5MB file actually look worse than the input? The HB output isn't going to change much based on the input file size.

It will take about the same time regardless of the output size. It's all a matter of rate control settings. You could get it to 20MB (will look like garbage) in the same time.

Do you want the 4:4:4 High Throughput profile for H.265? HB really isn't the software for 4:4:4 encoding.

What makes you think you need version 7.1?

The last release of .NET Framework was 4.8, the current release of .NET core is 5.0.6.

Try ripping to a video file instead of a VIDEO_TS structure with MakeMKV instead. There are other challenges with VIDEO_TS other than just encryption.
