Well I installed 1.2.0 which I had archived on my older machine, and lo and behold that solved the issue.

Any idea why this problem would present itself with Catalina? I've been running it the old way on other machines (none of which have Catalina) in the past and had no issues whatsoever. Is it because of a more recent change with the new OS?

With the current developer snapshots and the upcoming 0.9.4 release, the majority of the built in presets utilise constant quality encoding so in theory your encodes should appear very similar regardless of the preset used. It all depends on what you (and you friend) are planning on playing these encodes back on... The concert has LOTS of movement so I'm not sure what would be wiser? Decomb (default) or deinterlace (on the slowest setting to ensure best quality).

Okay thanks for the suggestion. I had heard lots of good things about streamclip but no one even mentioned WHAT to export as (they all just said "export with mpeg streamclip"). I gotta say that Handbrake does do a PHENOMENAL job though.
