Perhaps you've been lucky with previous copy attempts and the auto selected track was the right one (i think it usually is). Anyway, so far you are following the right process: insert DVD, in the Source section of the GUI click on browse and then navigate to the VIDEO_TS directory and click Open or OK (can't remember off hand what the button says). Select your preferred preset from the right hand preset navigation pane (press the Show Presets if you don't see them). Now, I normally go look at the Source section of the GUI and click on Title drop down list. Here you will see a bunch of tracks (very useful is you are copying multiple shows from a single DVD like a television series). I always look for the longest track in this list, and, when in doubt, I double check the time of the track with what the running time on the movie box. Finally, I click on the browse button in the Destination section of the GUI and set a destination directory and filename for the final output file. After I did all of that I clicked on the Audio & Subtitles tab in the lower portion of the GUI. When I click on Subtitles drop down list I see various subtitle options: English, French, and Spanish. All that being said, I think you have to make all of the necessary selections before you'll see available subtitle options. Try that and see what happens. Good luck.
As for making a copy with the audio dubbed in english, yes I believe there is a way to do it. I recently copied La Femme Nikta (great movie). It's a French movie which I usually watch in French with subtitles; however, when I made a recent copy to watch on my iPod it copied "automatically" dubbed in English. Can't say how it did it but I do plan to do some experimentation in the near future to figure it out.
